Eggs for days

‘Choose one ingredient and use this ingredient for every meal for a day’, that is what we call the All-day Challenge. Every week, someone from the Chopped Up team will choose an ingredient and come up with three nice dishes for a whole day; breakfast, lunch and dinner. This week it was my challenge, and the ingredient I chose was eggs.

The great thing about eggs is that you can do so many things with them. People will mostly just think of boiled or baked eggs, but there is so much more you can do!

For breakfast, I chose a very easy recipe which is at the same time very tasty, healthy and quick to make: banana pancakes.

Ingredients (for 1 person):
– 1 banana
– 2 eggs
– Olive oil


Step 1: mash the banana in a bowl and add 2 eggs to the mix. Stir the mix until it’s a somewhat flat batter.

Step 2: warm up some olive oil in a pan, add 2 or 3 table spoons of batter and simply bake the pancake.


Nice and easy, but really tasty! I managed to bake 4 small pancakes from this batter, and I also added some syrup to the pancakes for a sweeter bite. It’s also really tasty to add some more fruit or cinnamon.

Because I was in quite a rush around lunchtime, I chose to make a traditional but tasty version of eggs: scrambled eggs with baked mushrooms, tomatoes, onions, Grana Padano cheese and parsley.

Ingredients (for 1 person):
– 3 eggs
– 125 gr mushrooms
– 6 cherry tomatoes
– ¼ onion
– a pinch of Grana Padano cheese
– a pinch of parsley
– olive oil


Step 1: cut the tomatoes, mushrooms and onion in small parts and crack the eggs into a bowl. Stir the eggs.

Step 2: heat up some olive oil in a pan and first bake the mushrooms and the onion. Put the mushrooms and onion in a bowl when they are baked.

Step 3: pour the eggs into the frying pan and keep stirring until you have scrambled eggs. Add the mushrooms, onions and tomatoes to the mix and stir for a little longer. Add the cheese and stir until it’s melted.

Step 4: put the whole mix on a plate, and sprinkle the eggs with a pinch of parsley.


Voila! I ate it like this, but it is also very tasty to eat it with bread or toast on the side.

For dinner, I went for some Italian food made with eggs: Spaghetti Carbonara! I really love pasta so I found this a great recipe to choose for my egg challenge.

Ingredients (for 4 people):
– 400g spaghetti
– 125ml sour cream
– 2 eggs
– 75g Grana Padano cheese
– 4 pinches of parsley
– 125g bacon shreds
– some garlic


Step 1: boil the spaghetti for about 10 minutes. While the spaghetti boils, mix the sour cream with the eggs in a bowl with some pepper and salt.

Step 2: bake the bacon in a frying pan without olive oil in 4 to 5 minutes. Add the garlic to the bacon in the last 30 seconds. Take everything out of the pan and lay it on a kitchen roll.


Step 3: drain the spaghetti and put it in the frying pan with the sour cream/egg mix. Stir until the egg solids.

Step 4: mix the cheese, the bacon and the garlic with the spaghetti. Sprinkle the spaghetti with some parsley and black pepper.
